Dietary Cook - FTummary:
Cooks working in the healthcare field must exhibit knowledge of healthful cooking methods and ingredients, and prepare foods within the nutrition guidelines prescribed by the physician. Dietary cooks understand a variety of food allergens, restrictions and sensitivities and provide healthful substitutions without negating taste, presentation appeal or variety. The cook should have a high standard of safety practices to food preparation, equipment operation, and the sanitary conditions of the kitchen. They also assure that all food items are handled properly to insure safety and sanitation standards according to State and Federal regulations. Properly stores, covers, and refrigerates necessary items. Insures that foods are cooked to the appropriate temperature according to FDA Food Code.
Essential Duties & Responsibilities:
Provide needed inventory list of items for reorder to Manager
Receive, date, and rotate stock on dates of delivery
Follow instruction of Nutritional Services Manager in the preparation of meals and maintain meal schedules.
Plate food items and assures proper serving sizes are given to patients
Keep steam table, stove, deep fryer, grill, steam kettle, ovens, large refrigerator and freezer clean and neat
Retrieve items from freezer and appropriately thaw as needed for meal preparation
Prepare food items for catering and assist with set up of special function events and serve as needed.
Education: High School diploma or equivalent, read, write and understand the English language. Possess food sanitation certificate within 1 year of employment
Experience: Sanitation Certification & Preferred 5 years cooking in Food Service
